Cake…mug?

So today Beth comes upstairs with a piece of paper, and from the expression on her face, I know it’s a recipe. “Whatcha makin’?” I ask, which is a pretty standard question.
“Cake…in a mug,” was the answer.
“Cake…in a…mug??” Well, hey, I like cake. Besides, I wanted something chocolate.
So she gets out two big mugs, and mixes up the cake in them. Everyone wanted to know if she was making coffee, or cocoa, or…”what are you making?!?”

Then she brings me down this brown lump on a saucer. It was steaming and looked slightly odd. Then I tasted it, and I didn’t care if it looked odd. It was GOOD. Fresh, moist, rich chocolate cake. It tastes kind of like pudding cake, but with the pudding mixed in.

Cake in a Mug
4 tablespoons cake flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
1 mug

In the mug, mix flour, sugar, and cocoa.
Spoon in egg.
Pour in milk and oil, and mix well otherwise you’ll get little pieces of egg white in your cake!
Put in microwave for 3 minutes on maximum power (1000watt).
Wait until it stops rising and sets in the mug.
Tip contents out of the mug onto saucer and enjoy!

Beth read that if you use all-purpose flour, it’ll work, but just be a bit more dense. I liked it the way it was! And I thought a glaze would be good on top…or whipped cream, if you’re so inclined, or it would be really good with vanilla ice cream.
Oh yes and I forgot…Beth substituted coffee for the milk in mine. ^_^

Rich Hot Chocolate

[Resending because I discovered 30 year old instant coffee is more potent than fresh!]

So, the other night I wanted some hot chocolate. Unfortunately the store-bought hot chocolate we have on hand has sugar in it, so I googled a recipe for hot chocolate. I tried one, and modified it to be…this perfect incarnation of warm chocolate. OK, that sounds kind of weird. You’ve gotta try it, ok? It tastes just like a rich truffle. Mmmmm!!! (Be sure to read the notes!)

Rich Hot Chocolate
1 1/2 tbsp unsweetened cocoa powder
2 1/2 tsp powdered creamer
1 tbsp powdered milk
2 1/2-3 tsp instant coffee
2-3 tsp sugar/Splenda or other sweetener’s equivalent (to taste)

Assemble ingredients in cup; stir. Pour in hot water, stir.

Notes:

  • I used regular tablespoons and teaspoons, not measuring ones, and they were all slightly heaping.
  • You could add cinnamon to the dry ingredients, or vanilla when the water is poured.
  • Blending the powder works great…just make sure when you add the water to the blender that every outlet orifice and hole is plugged and that the rubber ring is on the base. If you use the blender, fill your mug with the hot water to measure then pour into the blender.
  • I used 2 tsp Splenda.
  • I also tried Sweet’n'Low instead of Splenda and liked it better.

Simply Oven Baked Pork Chops and Rice

Their way:
1 (10 3/4 ounce) can cream of mushroom soup
1 1/2 cups water
1 cup long grain rice (uncooked)
1/4 onion, sliced
1/4 teaspoon pepper
3-4 pork chops
salt and pepper (to taste)

Stir together soup, water, rice and 1/4 teaspoons pepper in a 3 quart casserole.
Add onions.
Salt and pepper chops and place on top of rice.
Cover and bake at 350* for 1 1/4 hours or until meat is done and liquid is absorbed.
Remove from oven and let rest 5 minutes.

From here

My way:
4 cans cream of chicken/mushroom/celery soup
6 cups water
4 cup long grain rice (uncooked)
pork chops
salt and pepper
any other spices you like
2 9×13 pans

Stir together 2 cans soup, 3 cups water, 2 cups rice, a little salt, a little pepper, and any other spice you like in a 9×13 pan. Repeat for the other pan.
Salt and pepper chops and place on top of rice.
Cover and bake at 350* for 1 1/4 hours or until meat is done and liquid is absorbed.
Remove from oven and let rest 5 minutes.

Now…I forgot onions, and it was good without it. I actually did four pans; two 9×13 and two smaller. It’s really good and really easy. :D

I haven’t tried these, but they sound pretty good!

Almost A&W Root Beer
3/4 c sugar, dissolved in
3/4 c hot water. Add the following:
1/2 tsp. plus 1/8 tsp. root beer concentrate. Cool. Pour into
1 liter cold seltzer water

Serve over ice. Drink immediately or store in fridge (tightly covered).

Cheez Whiz
1lb processed cheese, cut into small pieces
1 (13 oz) can evaporated milk
4T margarine
1t salt
dash of Tabasco sauce
1t dry mustard

Melt all ingredients in heavy saucepan or double boiler over medium heat. Pour into containers, let cool. Use on crackers or in recipes calling for Cheez Whiz.

Light Corn Syrup
2 c sugar
3/4 c water
1/4 tsp cream of tarter
dash of salt

Combine all 4 ingredients in heavy saucepan over medium heat, stirring constantly until mix comes to a boil. Reduce heat to low, cook until it reaches 230-240 F on candy thermometer. Remove from heat, cool completely. Bottle. Can be stored up to 3 months.
