This is the best cornbread recipe I’ve found!
Best Corn Bread
1 cup cornmeal
1 cup flour
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
1cup milk
1/3 cup oil
1 large egg, lightly beaten
Preheat oven to 400º. Grease 8-inch square baking pan.
Combine dry ingredients. In another bowl, combine wet ingredients; mix well. Add wet mixture to dry mixture; stir just until blended. (If you like, add a drained can of corn.) Pour into prepared pan.
Bake for 20-25 minutes or until toothpick/knife/broomstraw comes out clean.
I double the recipe for a 9×13 pan…tonight I baked two 9×13 pans so I quadrupled it.
